Rice with rumex, mint, fresh garlic covered by a layer of eggs and yogurt

You probably know that rumex is one of the most easy-to-find, healthy and tasty plants. It is famous and vastly used since ancient times. Rumex grows in nature and can be found close to water sources and elsewhere. It can also be cultivated in our home gardens. The most used species are perennial, so once planted, rumex does not need any additional care. It can grow edible leaves both during spring and autumn, which allows us to enjoy its taste more often. We can also collect and freeze leaves for the winter season. There are many recipes with rumex but we suggest one with rice and a layer of eggs and yogurt.

How to make

We clean and soak the rice in water for at least 8 hours.


We cut the green garlic into small pieces and the rumex into bigger ones. We add the oil and the garlic in a deep pan to steam for 1-2 minutes and then add the rumex. We leave it like that for the same period of time. We remove the rice from the water and mix it with the garlic and the rumex. We add the spices and the salt.


We move the mixture into a baking plate and add water in a 1:4 proportion related to the rice quantity. We bake in a preheated oven at 200 degrees Celsius until most of the water is evaporated, then we cover with the layer of eggs and yogurt which is prepared by stirring the eggs, the yogurt and the flour. We can add to them a pinch of salt. We bake the dish until the top layer gets a nice golden color. We serve the dish cut into square pieces.

1 ½ tea cup of rice

1 big bundle of rumex

2-3 stems of green garlic

2-3 table spoons of vegetable oil

3 eggs

1 ½ tea cups of yogurt

1-2 table spoon of flour

½ bundle of mint

Salt

Pepper
