Green Goodness

The recipes published here are seasonal and are part of our menu and the dishes can be tested at Botanica Guest House in Nadarevo. In addition, we would like to share these recipes with you so that you can prepare and enjoy them at home.

Lopushnik

Nature is so generous with us during the warm months, giving us rich variety of ideas to turn into culinary wonders. Just a short walk outside, in fresh air, and some of the products are already collected. The rest of the products were provided by a local lady who was happy to show us how to make a typical Bulgarian dish, from which every bite tastes like childhood.

How to make

Cut the green onions and the broad-leaved dock. Steam the onions with some oil and then add the broad-leaved dock with a little water. Add the bunch of mint (Mentha Spicata) and a pinch of salt. Cool slightly.


Make a mixture of the grated cheese and the eggs. Add a little water and mix everything together.


Oil the pastry sheets, spread the stuffing onto them, roll them and place them, one by one, into a greased pan.


Beat one egg and water and pour on top.


Bake at 200 degrees C for about 40 minutes or until golden brown.

Ingredients

  • A packet of phyllo dough

  • A large bowl of broad-leaved dock (Rumex Obtusifolius)

  • Green onions/spring onions – 5-8 stalks

  • A bunch of Mentha Spicata

  • A lump of cheese

  • 5 eggs

  • Salt

  • Oil – approx. 300 ml
