Courgette vegetable balls

The courgette is a vegetable with a variety of uses. It can be used for soups, dishes, salads and even desserts. But did you know that courgettes can be used to make incredible oven-baked ‘vegetable balls’ - a recipe particularly intriguing in autumn.
How to make
Grate the courgette, potatos, carrot and pear/apple. The products release juice, which you need to remove by squeezing the mixture several times. Once there is no more liquid in the mixture, add the spices. Then add chopped onion and crumbles of dried bread or rusks. You add breadcrumbs and cornflour until the mixture thickens so that it can form small balls. Shape the balls in the desired form, roll them in the cornflour and arrange them on an oiled baking sheet. Add a little oil on top, using a brush. Bake in a well-heated oven (190 degrees C) for about 20 minutes or until the vegetable balls turn golden. If necessary, you can flip them over for better baking.
Serve with yogart and garlic sauce, sprinkled with fresh dill.
The dish is seasonal and is offered at guest house "Botanica".
