Caramelised apple cake
We are announcing our monthly postswith seasonal recipes which are part of our menu and the dishes can be tested at Botanica Guest House in the village of Nadarevo. In addition, we would like to share these recipes with you so that you can prepare and enjoy them at home.
We cook with vegetables, fruits and spices, grown by us or by local people trained in natural agriculture at Botanica Life Foundation. Therefore, we strongly recommend using local products, grown by small farmers, as it is essential for the quality and the value of our meals. Seasonal food contains the most needed nutrients for our health during a particular time of the year. Furthermore, by picking seasonal recipes, we guarantee to ourselves fresh ingredients whose taste is authentic.
For many, desserts are irresistible part of the daily menu. For others, they mean an occasion and exclusivity. For yet another group of people, desserts have long been excluded from the menu.
The homemade cake, however, has a special place in everyone's heart. Often, its aroma and taste bring nostalgic childhood memories, a sense of sentiment for the past days and flavors which are hard to find nowadays. Hard but not impossible. When we select the products with care and attention, when we cook with love and positive attitude, the food gets filled with goodness. The more of its ingredients are homegrown, the better.
We share a recipe for caramelised apple cake which is dazzling, fluffy and very tasty, especially when the apples are homegrown.
How to make
Caramelise the sugar in the baking tray in which you will be making the cake. Allow to cool for a few minutes and then grind the butter over the caramel. Peel and cut the apples into thin half-moon pieces. Arrange them on top of the caramel and butter and then sprinkle with cinnamon and walnuts.
Whisk the eggs * and sugar, then add the remaining ingredients (flour, oil, baking powder) and stir until fully incorporated. Pour half of the mixture on the apples, arrange another row of apples, sprinkle with cinnamon and walnuts and then pour the rest of the dough.
Bake the cake in a preheated oven at 180 degrees (Celsius) for about 40 minutes. After removing the cake, while it is still warm, turn it over on a plate.

* remove the eggs from the fridge at least an hour earlier and leave at room temperature.

5 eggs
150 ml oil
330 grams of flour
300 grams of sugar
10 grams of baking powder
Caramel:
100 grams of sugar
40 grams of butter
Filling
5 apples
walnuts and cinnamon
