Baked beans with okra

One of the interesting combinations, diversifying the recipes for baked beans in the summer is to add okra. Not only that, but also, let’s bake it in the oven! Of course, you get a delicious dish that would surprise even the most sceptical. Coupled with the fact that okra is a vegetable with a high content of magnesium and vitamins K and C, which are well preserved in this gentle method of okra preparation, the dish becomes not only delicious but also very nutritious.
How to make
Soak the beans in water for at least 12 hours. Boil until soft, then add the courgettes, cut into cubes, and after that, add the onion, carrots and peppers. At the end of boiling, add one tomato, also cut into cubes. Leave on the stove until the beans are well cooked, so that they have released their starch and the water has almost evaporated. Remove the beans from the heat and add the salt, oil and all the spices without the mint. Place the beans and the vegetables in an oiled baking tray and arrange the blanched okra, burying it lightly in the beans. Arrange tomato rings on top and bake in a preheated oven at 180 degrees, until it gets a light golden color.
Serve sprinkled with fresh mint.

For 7 - 8 portions:
500 grams of beans
300 - 400 grams of steamed okra
1 onion
2 - 3 carrots
1 green and 1 red peppers
2 tomatoes
1 small courgette
Parsley
Black pepper
Celery leaves
Salt
Mint
Vegetable oil
